Preparation Steps
Prepare the Dough
In a large bowl, combine warm water (about 110°F), sugar, and yeast. Allow it to sit for about 5 minutes until it becomes frothy. Gradually add the flour and salt to the yeast mixture, mixing until a dough forms.
Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Shape the Pretzels
Preheat your wood-fired oven to about 450°F. Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope (about 24 inches long) and shape it into a pretzel.
Prepare the Baking Soda Bath
Bring a large pot of water to a boil, then add the baking soda. Carefully drop each pretzel into the boiling water for about 30 seconds. Use a slotted spoon to remove them and place them on a baking sheet lined with parchment paper.
Bake the Pretzels
Sprinkle coarse sea salt over the pretzels. Place the pretzels in the wood-fired oven and bake for about 8-10 minutes or until they are golden brown.
Serve
Remove the pretzels from the oven and let them cool slightly. Serve warm with spicy brown mustard, house-made marinara, or beer cheese.
