Prepare the Sweet Potatoes

Preheat your oven to 400°F (200°C). Peel and thinly slice the sweet potatoes into rounds. Toss them with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 25 minutes, flipping halfway through, until tender and lightly caramelized.

Caramelize the Onions

While the sweet potatoes are roasting, heat the remaining tablespoon of olive oil in a skillet over medium heat. Slice the onion thinly and add it to the skillet. Cook, stirring occasionally, for about 15-20 minutes until the onions are soft and caramelized. Set aside.

Assemble the Pizza

Roll out the pizza dough on a floured surface to your desired thickness. Transfer the dough to a pizza stone or baking sheet. Spread the white sauce evenly over the dough, then sprinkle the mozzarella and provolone cheese on top. Layer the roasted sweet potatoes and caramelized onions over the cheese, then crumble the goat cheese on top.

Bake the Pizza

Preheat the oven to 475°F (245°C). Bake the pizza for 12-15 minutes or until the crust is golden brown and the cheese is bubbly and slightly browned.

Garnish and Serve

Remove the pizza from the oven, let it cool for a few minutes, and garnish with fresh herbs if desired. Slice and serve hot.
