Pomegranate-Cactus Pear Base
Make simple syrup (if needed)
If using homemade simple syrup, combine equal parts sugar and water (for this recipe use 1/4 cup sugar and 1/4 cup water) in a small saucepan. Heat gently, stirring, until sugar dissolves. Cool before using. (If using store-bought or agave, skip this step.)
Place the pomegranate arils and peeled, chopped cactus pear in a blender. Add the fresh lime juice, 2 tablespoons simple syrup (or agave), and 1 cup cold water.
Pulse on medium-high until the mixture is smooth but not completely liquefied into foam — about 20–30 seconds. You want a well-integrated puree with visible color from both fruits.
Strain the puree through a fine-mesh sieve or chinois into a bowl or pitcher, pressing with the back of a spoon or a spatula to extract as much juice as possible. Discard the solids (or reserve for smoothies). Expected yield: about 1 to 1 1/4 cups of concentrated juice.
Taste the strained juice and adjust sweetness or acidity: add up to 1 tablespoon more simple syrup if you prefer sweeter, or up to 1 teaspoon more lime juice if you prefer brighter acidity.
Chill the base in the refrigerator for 10–15 minutes if not assembling immediately.
Assembly & Garnish
Fill four serving glasses halfway with crushed ice (about 1/2 cup ice per glass).
Divide the pomegranate-cactus pear base evenly among the glasses — about 1/4 to 1/3 cup per glass depending on yield and desired intensity.
Top each glass with 1/4 cup club soda (or sparkling water) to add effervescence. Gently stir once to combine so the soda doesn't go flat.
Add 1–2 fresh mint leaves into each glass and lightly clap the leaves between your palms before dropping in to release aroma.
Garnish each glass with a lime wedge on the rim and sprinkle about 1/2 tablespoon pomegranate arils over the top for color and texture.
Serve immediately with a straw or short spoon to stir as the drink dilutes. Optionally provide extra simple syrup at the table for guests who want it sweeter.
