Waffle Batter
Combine dry ingredients
In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, granulated sugar, and a pinch of salt until evenly combined.
Combine wet ingredients
In a separate bowl or large measuring cup, whisk the egg until lightly beaten. Add the milk, melted butter, and vanilla extract and whisk until blended.
Make the batter
Pour the wet ingredients into the dry ingredients. Gently stir just until combined — a few small lumps are fine. Do not overmix (overmixing makes waffles tough). Let the batter rest for 3–5 minutes to allow the baking powder to activate and the whole-wheat flour to hydrate.
Cook the waffles
Spoon or pour the recommended amount of batter onto the preheated waffle iron (typically 1/2 to 3/4 cup depending on waffle iron size). Close the lid and cook until the waffle is golden brown and crisp at the edges, about 3–5 minutes. Follow your waffle iron's indicator if it has one. Carefully remove the waffle with a nonmetal utensil and transfer to a wire rack or plate. Repeat with remaining batter, re-greasing the iron if needed.
