Mix dry ingredients

In a large mixing bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and salt until evenly combined and free of lumps.

Mix wet ingredients

In a separate medium bowl or large measuring cup, whisk the milk, egg, melted butter, and vanilla extract until smooth and slightly frothy.

Combine wet and dry

Make a well in the center of the dry ingredients and pour in the wet mixture. Gently stir with a spatula or wooden spoon until just combined. A few small lumps are okay — do not overmix or the pancakes will be tough.

Rest the batter

Let the batter rest for 5 minutes at room temperature. This gives the baking powder time to activate and produces fluffier pancakes.

Preheat pan

Place a nonstick skillet or griddle over medium-low to medium heat and let it warm for 2–3 minutes. Test the heat by sprinkling a few drops of water—if they dance and evaporate, the pan is ready.

Prepare the surface

Lightly brush the pan with the vegetable oil or spread a small amount of butter. Wipe excess with a paper towel so the cooking surface is lightly greased but not greasy.

Cook pancakes

For each pancake, pour a 1/4-cup measure of batter onto the hot pan (for mini pancakes for kids, use 2–3 tablespoons instead). Leave space between pancakes. Cook until bubbles form on the surface and the edges look set, about 2–3 minutes. Flip gently with a spatula and cook the other side until golden brown, about 1–2 minutes more.

Keep warm (optional)

If making multiple batches, keep finished pancakes on a baking sheet in a low oven (200°F / 95°C) in a single layer to stay warm while you finish cooking the rest.

Stack pancakes on plates and drizzle with maple syrup or honey to taste. Add fresh fruit alongside or on top for color and nutrition.

Optional finishing

Dust with powdered sugar if desired. For picky kids, you can top with a small pat of butter, a thin smear of jam, or sprinkle with mini chocolate chips while the pancakes are hot so they stick.

Storage and reheating

Store leftover pancakes in an airtight container in the refrigerator for up to 3 days. Reheat in a toaster or warm in a 350°F (175°C) oven for 5–7 minutes, or microwave individual pancakes for 20–30 seconds.
