Juice Base
Prepare the pineapple
Trim the top and bottom off the pineapple. Stand it upright and slice away the skin following the curve, removing any remaining 'eyes' with a small paring knife. Cut the pineapple into quarters lengthwise, remove the core from each quarter, then chop into 1-inch chunks.
Blend
Place the pineapple chunks in a blender with 1 cup filtered water. Blend on high until completely smooth, about 45โ60 seconds. If your blender is small, blend in two batches to avoid overfilling.
Strain (optional)
If you prefer a smooth juice, pour the blended pineapple through a fine-mesh sieve or nut milk bag into a bowl, pressing with the back of a spoon to extract as much liquid as possible. If you like pulp, skip this step.

Prepare the ginger
Peel the fresh ginger root with the edge of a spoon or a small knife. Grate the ginger finely (about 2 ounces yields roughly 2 tablespoons grated).
Infuse and sweeten
Add the grated ginger to the pineapple juice in a pitcher. Stir in the freshly squeezed lime juice (2 tablespoons) and honey or agave (1 tablespoon). Stir thoroughly to dissolve the sweetener. Let the mixture rest at room temperature for 8โ10 minutes to allow the ginger flavor to infuse.
Adjust
Taste the infused juice and adjust sweetness or acidity as desired: add up to 1 tablespoon more honey/agave for sweetness, or another 1/2 tablespoon lime for more brightness. If the ginger is too strong, dilute with a little filtered water (up to 1/2 cup).
Finishing & Garnish
Chill and serve
Fill two serving glasses with ice (about 1 cup ice per glass). Pour the pineapple-ginger mixture evenly into the glasses, dividing it between them. If you want a lightly fizzy finish, top each glass with 1/2 cup chilled sparkling water (optional).
Garnish
Bruise the mint leaves gently by clapping them between your palms to release aroma and drop 3 leaves into each glass. Garnish each glass with a pineapple wedge on the rim. Serve immediately.
Make-ahead notes
The pineapple-ginger juice (without ice or sparkling water) can be refrigerated in a sealed pitcher for up to 48 hours. Stir before serving and add fresh ice and sparkling water when ready.
