Make Pancake Batter
In a medium bowl whisk together 1 cup all-purpose flour, 2 tsp baking powder, 1 tbsp granulated sugar and 1 tsp salt. In a separate bowl whisk 1 cup milk, 1 large egg, 2 tbsp melted butter and 1/2 tsp vanilla. Pour wet into dry and stir until just combined (a few small lumps are okay). Let batter rest 5 minutes.
Cook Pancake
Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil. For a single large pancake (restaurant single), pour about 1/2 to 3/4 cup batter onto the hot surface. Cook until bubbles form and edges look set, about 2–3 minutes, then flip and cook 1–2 minutes more until golden and cooked through. Keep warm on a plate tented with foil.
Make French Toast Custard
In a shallow dish whisk 1 large egg with 1/4 cup milk (or cream), 1/4 tsp ground cinnamon and 1/4 tsp vanilla until combined. Dip 2 slices thick bread, soaking each side for 10–15 seconds so it absorbs but does not fall apart.

Prepare Eggs to Order
Use a nonstick skillet over medium-low heat and add 1 tbsp butter or oil. Crack 2 large eggs and cook to the guest's order: sunny-side up (cover for 2–3 minutes until whites set), over-easy (cook 2 minutes, flip gently and cook 15–30 seconds), over-medium (flip and cook 45–60 seconds), over-hard (cook until yolk fully set), scrambled (beat eggs with 1/4 tsp salt and 1/8 tsp pepper, pour into pan and stir gently until soft curds form). Season with remaining salt and pepper to taste. Transfer to plate and keep warm with pancakes/French toast.
Breakfast Meat (choose one)
Cook Cob Smoked Bacon or Turkey Bacon
For bacon: heat skillet over medium and lay 2 slices bacon (cob smoked or turkey) in single layer. Cook 3–5 minutes per side until crisp or to desired doneness, turning as needed. Drain on paper towels. If using turkey bacon, cook slightly less time if thin.
Cook Turkey Sausage Links
For turkey sausage links (2): heat skillet over medium with 1 tsp oil. Add links and cook 8–10 minutes, turning frequently until evenly browned and cooked through (internal temp 165°F / 74°C).
Cook Pork Sausage Link
For a pork sausage link (1): heat skillet over medium with 1 tsp oil. Cook 8–10 minutes, turning frequently, until browned and internal temperature reaches 160°F (71°C).
To Serve / Optional Upgrades
Plate the chosen pancake (single) or 2 slices of French toast. Add the two cooked eggs beside them and the chosen breakfast meat. Top pancakes or French toast with 1 tbsp butter and serve maple syrup (about 1/4 cup) on the side. Dust French toast with powdered sugar and add fresh fruit if desired. Note: upgrade to any specialty pancake or French toast by substituting that recipe and adding $1.50 (adjust toppings accordingly).
