Preparation

Measure and heat

Measure 30 g of fresh whole-bean EB blend coffee. Heat filtered water to 94°C (approximately just-off-boil). If you don't have a thermometer, bring water to a boil and let it sit for 30 seconds.

Grind

Grind the 30 g of coffee to a medium-coarse consistency (similar to kosher salt for Hario V60, slightly coarser for Chemex, and slightly finer for Kalita). Aim for a grind that yields an extraction time around 2:30–3:30 minutes total brew time.

Prepare filter and equipment

Place the filter in the dripper. If using a paper filter, rinse it with hot water to remove paper taste and preheat the dripper and server; discard rinse water. Place the dripper on the server or mug and tare the scale.

Brewing

Add coffee

Add the ground coffee to the pre-wet filter and level the bed by gently shaking or tapping the dripper so grounds are even.

Bloom (0:00–0:45)

Start the timer. Pour 60 ml of the heated filtered water evenly over the grounds to saturate all coffee. Allow the coffee to bloom for 30–45 seconds to degas. You should see bubbling and expansion of the grounds.

First pour (0:45–1:30)

At 0:45–0:50, slowly pour additional hot water in a concentric spiral, pouring up to 200 ml total (including the bloom water). Keep the water level below the rim of the dripper and avoid pouring directly onto the filter. Maintain a steady, controlled pour.

Second pour (1:30–2:30)

When the water level is about halfway down the dripper (around 1:30), continue pouring in a slow circular motion until you reach the full 500 ml brew weight. Aim to finish pouring by about 2:00–2:15.

Drawdown and finish (2:30–3:30)

Allow the remaining water to drain through the coffee. Total contact time (from first pour start to final drawdown) should be about 2:30–3:30 minutes depending on grind and dripper. If extraction is too fast, make the grind slightly finer next time; if too slow, make it slightly coarser.

Serve

Remove the dripper and discard the grounds and filter. Swirl the server to homogenize the brewed coffee, then pour into cups. Add milk or sweetener if desired. Serve immediately.

Recommended tasting notes: EB Blend produces a balanced cup with (depending on roast) bright acidity, chocolate/caramel sweetness, and a clean finish. Adjust dose (g of coffee) or brew ratio (water weight) to taste for a stronger or lighter cup.
