Omelet base
Beat eggs
Crack 3 large eggs into a medium bowl. Add 1 tablespoon whole milk, 1 teaspoon kosher salt, and 1 teaspoon freshly ground black pepper. Whisk vigorously until the mixture is uniform and slightly frothy (about 20–30 seconds).
Preheat pan
Place a nonstick skillet (8–10 inch) over medium-low heat. Add 1 tablespoon unsalted butter and let it melt, swirling to coat the pan. The butter should sizzle gently but not brown.
Cook omelet
Pour the beaten eggs into the skillet and let sit undisturbed for 10–15 seconds until the edges begin to set. Using a spatula, gently pull set edges toward the center while tilting the pan to allow uncooked egg to flow to the edges. Continue until the top is still slightly glossy but mostly set, about 1–2 minutes total.
Crab cream cheese filling
Prepare filling
While eggs begin to set, prepare the filling: finely shred or chop 4 oz imitation crab. In a small bowl combine the chopped crab with 3 tablespoons softened cream cheese, 2 tablespoons thinly sliced green onions, 1 teaspoon soy sauce, 1 teaspoon sesame oil, and if using, 1 teaspoon very finely minced shallot and 1 teaspoon crushed red pepper. Mix until smooth and cohesive. Taste and adjust seasoning—add a pinch of salt if needed.
Add filling to omelet
Spoon the crab-cream cheese mixture onto one half of the omelet in a line down the center or slightly off-center, leaving a 1⁄2 inch border so the egg can fold over cleanly. Use about all of the filling (it should be a generous layer but not so much that the omelet can't fold).
Fold omelet
Carefully fold the empty half of the omelet over the filled half using a spatula. Let it cook for another 30–45 seconds to allow the filling to warm and the cream cheese to soften further. If you prefer the cream cheese fully melted, cover the pan with a lid for 30 seconds on low heat.
Transfer to plate
Gently slide the finished omelet onto a warmed plate and keep warm while you prepare the wonton topping if not already done.
Crisp wonton topping
Prepare wontons
Stack 6 wonton wrappers and using a sharp knife or pizza cutter, cut them into strips or triangles (for crisp chips, cut into 6–8 pieces each).
Fry wontons
In a small heavy-bottomed skillet or saucepan, pour in 1 cup vegetable oil and heat over medium-high until oil registers 350°F (175°C) or a small piece of wonton sizzles and rises immediately. Fry the wonton pieces in batches (do not overcrowd) until golden brown and crisp, about 30–60 seconds per side. Use a slotted spoon to remove and transfer to a paper towel-lined plate. Immediately sprinkle with 1 teaspoon salt while still hot to season.
Alternative crisp method (baked)
If you prefer baking, preheat oven to 375°F (190°C). Arrange wonton pieces on a baking sheet in a single layer, brush or spray lightly with oil, and bake 5–7 minutes, turning halfway, until golden and crisp.
To finish & serve
Top and garnish
Arrange the crispy wonton pieces on top of the folded omelet. Drizzle 3 tablespoons sweet chili sauce over the omelet (or spoon on the side for dipping). Sprinkle with 1 tablespoon thinly sliced green onions and 1 teaspoon toasted sesame seeds if using.
Serve
Serve immediately while hot so the wontons remain crisp and the filling is creamy. Offer extra sweet chili sauce at the table.
