Whisk eggs

Crack the 3 large eggs into a medium bowl. Add 1 tablespoon milk or water, 1 teaspoon kosher salt, and 1/4 teaspoon freshly ground black pepper. Whisk vigorously until yolks and whites are fully combined and mixture is slightly frothy (about 30 seconds).

Preheat pan

Place a nonstick or well-seasoned 8–10 inch skillet over medium-low heat. Add 1/2 tablespoon neutral oil and 1 tablespoon unsalted butter. Allow butter to melt and foam but not brown — this creates an even nonstick surface.

Cook eggs

Pour the whisked eggs into the warmed skillet. Let them sit undisturbed for 10–15 seconds until edges begin to set. Using a heatproof spatula, gently pull set edges toward the center while tilting the pan to allow uncooked egg to run to the edges. Continue this folding motion for about 45–60 seconds until eggs are mostly set but still slightly glossy on top.

Vegetable add-ins

Pre-cook firm vegetables (if using)

If you selected mushrooms, onions, bell pepper or other firm vegetables, sauté them first in a separate small skillet with 1/2 teaspoon oil over medium heat until softened and any liquid has evaporated (onions and peppers 3–4 minutes; mushrooms 4–5 minutes). Season lightly with a pinch of salt. Transfer to a plate and keep warm.

Leafy greens and quick veggies

If using spinach or scallions, you can add them directly to the eggs when they are still slightly runny; they will wilt with residual heat. Cherry tomatoes and jalapeño are best added raw for brightness — scatter them over the egg before folding.

Prepare proteins

Ensure proteins (bacon, sausage, ham, chicken, smoked salmon) are fully cooked and warmed. If cold, warm briefly in the same pan you used for vegetables or microwave 20–30 seconds. Chop or shred to small pieces (roughly 1/4 cup measurement).

Add proteins to eggs

When eggs are mostly set but still slightly runny on top, sprinkle your chosen proteins evenly over one half of the omelet. For smoked salmon, add after eggs are off heat if you prefer delicate texture.

Cheese add-ins

Add cheese

Scatter selected shredded or crumbled cheeses over the protein/vegetable half of the omelet while the eggs are still warm so the cheese melts. Reserve softer cheeses (goat cheese, feta) to add last if you want a distinct creaminess.

Finishing & plating

Fold and finish

Using a spatula, carefully lift the empty half of the omelet and fold it over the filled half to create a semicircle. Let cook 15–30 seconds more to finish melting the cheese and warm the fillings. Avoid overcooking — remove when eggs are just set and still tender.

Plate and garnish

Slide the omelet onto a warm plate. Drizzle 1/2 teaspoon herb oil or olive oil and add 1 teaspoon hot sauce if desired. Sprinkle 1 tablespoon chopped fresh herbs (chives, parsley or cilantro) and an extra pinch of salt and pepper to taste.
