Method
Cocktail
Dry shake
Add gin, crème de violette, fresh lemon juice, simple syrup, and the egg white to a cocktail shaker. Do not add ice yet. Secure the lid and dry shake vigorously for 15–20 seconds to emulsify the egg white and create foam.
Wet shake
Open the shaker and add a generous handful of ice. Secure the lid and shake vigorously for 12–15 seconds until well chilled and the outside of the shaker is frosty. This chills the drink and further aerates the foam.
Strain and serve
Double-strain the cocktail into a chilled coupe or martini glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and ensure a silky texture.
Garnish
Garnish with a cocktail cherry placed on the foam or a thin lemon twist rested on the rim. Optionally add a single drop or dash of Angostura bitters on top of the foam and gently drag a toothpick through it to create a small design. Serve immediately.
Garnish & Tools
Have glassware chilled beforehand by placing in the freezer for a few minutes or filling with ice water while preparing the shaker. Use fresh lemon juice and quality crème de violette for best flavor. If avoiding raw egg, substitute with 0.75 oz aquafaba (chickpea liquid) and adjust dry shake time similarly.
