Apple Juice (cold-pressed style)

Prepare apples

Wash the apples thoroughly. Core and roughly chop them into pieces large enough for your blender or juicer. No need to peel unless you prefer a smoother, less cloudy juice.

Blend or juice

If using a juicer: feed apple pieces through the juicer and collect the juice. If using a blender: place chopped apples and 1/4 cup cold water in the blender and pulse until well pureed.

Strain (if using blender)

Pour the blended apple purée through a fine-mesh sieve or nut milk bag into a bowl, pressing or squeezing to extract as much liquid as possible. Discard or reserve the pulp for another use (baking, compost).

Adjust flavor

Stir in 1 tablespoon fresh lemon juice to brighten flavor and 1 teaspoon sugar or simple syrup to taste. Taste and adjust: add more lemon if too sweet, or a touch more sugar if too tart.

Finish & serve

Chill and serve

Fill a glass with ice (about 1 cup). Pour the fresh apple juice over the ice. If you prefer a sparkling version, top with 2 oz club soda and stir gently.

Garnish

Garnish with a cinnamon stick or a light dusting (1/4 tsp) of ground cinnamon and a mint sprig if desired. Serve immediately.
