Preparation
1. Cook the Noodles
Bring a pot of water to a boil. Add the ube noodles and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.
2. Make the Dressing
In a bowl, whisk together the fresh orange juice, lime juice, soy sauce, sesame oil, chili flakes, honey or maple syrup, and salt. Adjust seasoning to taste.
3. Prepare the Greens
In a large bowl, combine the chopped cilantro, basil, and mint. Toss to mix well.
Assembly
4. Assemble the Bowl
In a large serving bowl, combine the chilled ube noodles with the herbed greens. Drizzle the citrus chili dressing over the top and toss gently to combine.
5. Add Toppings
Sprinkle the crushed peanuts and crispy onions over the top of the noodle bowl. Serve immediately or chill in the refrigerator until ready to serve.
