1. Cook the Chicken

In a pot, add the chicken breasts, cover them with water, and bring to a boil. Reduce heat and simmer for 20-25 minutes until cooked through. Remove chicken, let cool, then shred.

2. Prepare the Bacon

In a skillet, cook the bacon slices over medium heat until crispy. Remove and place on paper towels to drain excess fat.

3. Make the Garlic Mayonnaise

In a small bowl, mix garlic mayonnaise ingredients if making from scratch, or simply use store-bought garlic mayonnaise.

4. Assemble the Sandwich

On two slices of sourdough bread, layer shredded chicken, bacon, lettuce, tomato slices, avocado slices, jalapeño Havarti cheese, and a dollop of garlic mayonnaise. Top with the other two slices of sourdough.

5. Griddle the Sandwich

Heat olive oil in a skillet over medium heat. Place the sandwiches in the skillet and griddle until golden brown on both sides and the cheese is melted, about 3-4 minutes per side.

6. Serve

Remove from skillet, slice in half, and serve warm with any desired sides.
