Cook the Jasmine Rice

Rinse jasmine rice under cold water until the water runs clear. In a pot, combine 1 cup of jasmine rice with 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit for 5 minutes before fluffing with a fork.

Prepare the Ahi Tuna

Cut the Ahi tuna into small cubes and place them in a bowl. Add soy sauce, sesame oil, and lime juice to the tuna, mixing gently to combine. Let it marinate for about 10 minutes.

Prep the Vegetables

While the rice is cooking and the tuna is marinating, dice the mango, slice the avocado, cucumber, and watermelon radish.

Assemble the Poke Bowl

In a bowl, place a serving of jasmine rice as the base. Arrange the marinated Ahi tuna, diced mango, sliced avocado, cucumber, and watermelon radish on top of the rice. Sprinkle with green onions and sesame seeds to finish.
