Cocktail

  1. 1

    Prepare glass

If desired, run a lime wedge around the rim of a rocks glass and dip the rim into coarse salt or Tajín. Fill the glass about two-thirds full with crushed ice and set aside.

  2. 2

    Combine spirits and citrus

In a cocktail shaker, add 1 oz El Tequileño blanco tequila, 0.5 oz triple sec, 0.75 oz fresh lime juice, and 0.5 tsp simple syrup (or a few drops of agave to taste). Add a small handful of ice to the shaker (enough to chill but not over-dilute).

  3. 3

    Shake

Secure the shaker lid and shake vigorously for about 10–12 seconds until the exterior of the shaker is cold and slightly frosted.

  4. 4

    Strain over ice

Strain the shaken mixture into the prepared rocks glass over the crushed ice, leaving room at the top for soda.

  5. 5

    Top with soda

Gently top the drink with 2 oz chilled club soda. Stir gently once or twice with a bar spoon to integrate without flattening the soda.

  6. 6

    Garnish and serve

Float a lime wheel or place a wedge on the rim. Serve immediately with a short stirring straw or spoon so the drink can be re-stirred as the ice melts.
