Striploin Steak
Roasted Garlic, Peppercorn Sauce

Preparing the Striploin

Season the Steak
Pat the striploin steak dry with paper towels. Season both sides generously with salt and black pepper.

Sear the Steak
In a large skillet, heat olive oil over medium-high heat. Add the steak and sear for about 4-5 minutes on each side, or until it reaches your desired doneness. Remove from skillet and let it rest for a few minutes.
Making the Sauce

Roast the Garlic
Preheat the oven to 400°F (200°C). Wrap the garlic cloves in foil and roast for 20-25 minutes until soft and caramelized. Once cool, squeeze the roasted garlic out of the skins and set aside.

Prepare the Sauce
In the same skillet used for the steak, add the butter and melt over medium heat. Add the whole peppercorns and cook for 1 minute. Stir in the beef stock and bring to a simmer. Add the heavy cream and roasted garlic, stirring well to combine. Simmer for 5-7 minutes until slightly thickened.

Finish the Sauce
Taste and adjust seasoning as necessary. Stir in chopped parsley just before serving.

Plate the Dish
Slice the striploin steak and serve it topped with the roasted garlic peppercorn sauce. Enjoy!
