    Prepare the Potatoes

    Peel and cut the potatoes into fries. Soak them in cold water for about 30 minutes to remove excess starch.

    Cook the Fries

    Drain and pat the potatoes dry. Heat olive oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

    Prepare the Steak

    Season the ribeye steak with salt and black pepper on both sides. Heat a skillet over high heat and add a little olive oil.

    Cook the Steak

    Sear the steak for 4-5 minutes on each side for medium-rare, or until your desired doneness. Remove from skillet and let rest for 5 minutes.

    Make the Red Wine Jus

    In the same skillet, add minced garlic and sauté for 1 minute. Then add red wine and beef broth. Let it simmer until reduced by half. Stir in butter until melted and smooth.

    Serve

    Slice the steak against the grain and serve with the fries drizzled with red wine jus. Garnish with chopped parsley.
