Prepare the Wontons
Heat the vegetable oil in a deep frying pan over medium heat. Fry the wonton wrappers until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

Make the Mango Edamame Salsa
In a mixing bowl, combine diced mango, edamame, red bell pepper, red onion, cilantro, lime juice, and salt. Mix well and set aside.

Prepare the Wasabi Crema
In a small bowl, mix together sour cream, wasabi paste, and lemon juice until smooth. Adjust wasabi to taste.

Mix the Citrus Marinade
In another small bowl, whisk together olive oil, orange juice, lime juice, honey, and salt until well combined.

Assemble the Nachos
On a serving platter, layer the crispy wontons, top with mango edamame salsa, drizzle with citrus marinade, and finish with a dollop of wasabi crema.
