Preparation

Make the Piri Piri Aioli

In a bowl, combine mayonnaise, minced garlic, Piri Piri sauce, lemon juice, and salt. Mix well until smooth and set aside.

Prepare the Chicken

Marinate the chicken thighs with Piri Piri sauce, olive oil, and salt. Let them marinate for at least 30 minutes or overnight for better flavor.

Prepare the Potatoes

Wash and cut Yukon Gold potatoes into wedges. Toss them with olive oil, salt, and black pepper.

Cooking

Cook the Potatoes

Preheat the oven to 425°F (220°C). Spread the potato wedges on a baking sheet and roast for 25-30 minutes, or until golden and crispy.

Grill the Chicken

Heat a grill or grill pan over medium-high heat. Grill the marinated chicken thighs for about 6-7 minutes on each side or until fully cooked.

Char the Broccolini

In the last 10 minutes of cooking the potatoes, toss broccolini in olive oil, salt, and juice from half the lemon. Add to the grill or a separate pan and char for about 4-5 minutes.

Prepare the Arugula Salad

In a bowl, combine arugula, olive oil, lemon juice, and salt. Toss gently and set aside.

Serving

Plate the Dish

On a plate, arrange the grilled chicken, roasted Yukon potatoes, charred broccolini, and arugula salad. Serve with Piri Piri aioli on the side.
