Filet Mignon with Roasted Garlic Red Wine Jus

Preparation and Cooking

    Prepare the Garlic

    Preheat your oven to 400°F (200°C). Cut the top off the garlic bulb to expose the cloves and drizzle with a bit of olive oil. Wrap in foil and roast in the oven for about 30 minutes or until soft.

    Season the Filet Mignon

    While the garlic is roasting, season the filet mignon with salt and black pepper on both sides.

    Sear the Filet

    In a skillet over medium-high heat, add olive oil. Once hot, add the filet mignon and sear for 4-5 minutes on each side for medium-rare (adjust time for desired doneness). Remove from the heat and let it rest.

    Make the Red Wine Jus

    In the same skillet, add red wine, scraping up any browned bits from the bottom. Allow it to reduce by half, then add beef broth and fresh rosemary. Simmer for about 10 minutes until slightly thickened.

    Finish the Jus

    Remove the roasted garlic from the oven, squeeze the cloves into the sauce, and stir in butter until melted and combined. Adjust seasoning with salt and pepper if needed.

    Slice the filet mignon and serve it drizzled with the roasted garlic red wine jus.
