Chocolate Mousse

Melt Chocolate and Butter
In a heatproof bowl, melt the dark chocolate and butter together over a pot of simmering water. Stir until smooth and let it cool slightly.

Whisk Eggs and Sugar
In a separate bowl, whisk the eggs and granulated sugar together until pale and fluffy.

Combine Mixtures
Gently fold the melted chocolate mixture into the egg mixture until combined.

Whip Cream
In another bowl, whip the heavy cream to soft peaks and fold it into the chocolate mixture.

Chill
Pour the mousse into serving dishes and refrigerate for at least 2 hours to set.
Sweet Pickled Berries

Prepare Pickling Liquid
In a saucepan, combine sugar, apple cider vinegar, and water. Heat until the sugar dissolves.

Pickle Berries
Place the mixed berries in a jar and pour the pickling liquid over them. Let sit for at least 1 hour before serving.
Sponge Toffee

Cook Sugar Mixture
In a saucepan, combine granulated sugar and corn syrup. Cook over medium heat until the mixture reaches a deep amber color.

Add Baking Soda
Remove from heat and quickly stir in baking soda, which will cause the mixture to bubble up.

Cool and Break
Pour the mixture onto a baking sheet lined with parchment paper and let cool completely before breaking into pieces.
