Cooking Instructions
- 1
Prepare the Garlic Chips
In a small pan, heat 2 tablespoons of olive oil over medium heat. Add the sliced garlic cloves and fry until golden brown and crispy. Remove from the oil and set aside on paper towels to drain.
- 2
Fry the Oregano
In the same pan, add another tablespoon of olive oil and heat over medium heat. Add the fresh oregano and fry for about 30 seconds until crispy. Remove and set aside.
- 3
Cook the Pasta
Bring a large pot of salted water to a boil. Add the fresh tagliatelle and cook according to package instructions until al dente, typically around 3-4 minutes.
- 4
Combine and Serve
Reserve 1 cup of pasta cooking water and drain the pasta. In the same pot, add the drained pasta, cracked black pepper, and the remaining olive oil. Toss well, adding reserved pasta water a little at a time until desired creaminess is achieved. Stir in grated Pecorino Romano cheese until melted and combined. Adjust seasoning with salt if necessary. Serve immediately, topped with garlic chips and fried oregano.
