Prepare the Cauliflower Puree

In a pot, bring water to a boil and add the cauliflower florets. Cook until tender, about 10 minutes. Drain and transfer to a blender.

Blend the Puree

Add a pinch of salt and pepper to the blender with the cauliflower. Blend until smooth, adding a little water if necessary to achieve desired consistency. Set aside.

Cook the Asparagus

In a skillet, bring a small amount of water to a boil. Add the asparagus and blanch for about 2-3 minutes until bright green and tender-crisp. Drain and set aside.

Prepare the Vanilla Bean Butter Sauce

In a small saucepan, melt the butter over low heat. Split the vanilla bean and scrape the seeds into the butter. Simmer gently for about 5 minutes to infuse the flavors. Season with salt.

Smoke the Scallops

Using a stovetop smoker, smoke the scallops for about 5-7 minutes until they are opaque and cooked through. If you don't have a smoker, you can grill them on a high heat for 2-3 minutes per side.

Assemble the Dish

On a plate, spread a layer of cauliflower puree. Arrange the smoked scallops and blanched asparagus on top. Drizzle with vanilla bean butter sauce and finish with a drizzle of chili oil.
