Preheat and prepare potatoes

Preheat the oven to 375°F (190°C). Peel and cut russet potatoes into roughly 1/2-inch cubes so they cook evenly.

Cook potatoes

Place cubed potatoes in a large pot and cover with cold water by 1 inch. Add 1/2 teaspoon salt. Bring to a boil over high heat, then reduce to a simmer and cook until potatoes are tender when pierced with a fork, about 10–12 minutes. Drain well in a colander and return to the hot pot for a minute to evaporate excess moisture.

Mash and combine base

While potatoes are hot, add 4 tablespoons butter, 1 cup whole milk (warmed), 1 cup sour cream, and 4 oz softened cream cheese to the pot. Mash to a mostly-smooth but slightly chunky texture using a potato masher or fork. Taste and adjust consistency with a splash more milk if needed (no more than 2 tablespoons).

Season and mix cheeses

To the mashed potato base, add 2 cups shredded sharp cheddar, 1 cup shredded Colby Jack (or Monterey Jack), 1 cup cream of chicken soup, 2 tsp minced garlic, 1 tsp onion powder, 1.5 tsp salt, 3/4 tsp black pepper, and 1 tablespoon dried or fresh chopped chives. Fold gently until evenly combined. The mixture should be creamy and cheesy; scrape the bowl to ensure no pockets of cream cheese remain.

Adjust seasoning

Taste a small spoonful and adjust salt and pepper as needed. If the mixture is too thick for serving, stir in up to 2 more tablespoons of milk to reach desired consistency.

Prepare breadcrumb topping

In a small bowl combine 3/4 cup panko breadcrumbs (or crushed crackers), 1/4 cup grated Parmesan, and 2 tablespoons melted butter. Mix until crumbs are evenly moistened.

Assemble in baking dish

Spread the cheesy potato mixture into a lightly buttered 9x9-inch (or equivalent) baking dish, smoothing the top. Sprinkle 1/2 cup extra shredded cheddar evenly over the surface. Evenly distribute the breadcrumb-Parmesan mixture over the cheese.

Bake

Bake in the preheated 375°F (190°C) oven for 20–25 minutes, until the topping is golden brown and the casserole is bubbling around the edges. If you want extra browning, switch to broil for 1–2 minutes while watching closely.

Rest and garnish

Remove from oven and let rest 5 minutes. Sprinkle with an additional pinch of chives before serving to add color and mild onion flavor.
