Buttermilk Green Chili Aioli

Method

Calamari & Shrimp

    Prepare the Seafood

    In a bowl, combine the cleaned calamari and shrimp. Add sliced cherry peppers and toss to mix.

    Prepare the Coating

    In a separate bowl, mix together all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper.

    Coat the Seafood

    Dredge the calamari and shrimp mixture in the flour mixture until fully coated.

    Heat the Oil

    In a heavy skillet or deep fryer, heat olive oil over medium-high heat until hot.

    Fry the Seafood

    Carefully add the coated calamari and shrimp to the hot oil. Fry in batches to avoid overcrowding. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Buttermilk Green Chili Aioli

    Combine Ingredients

    In a bowl, whisk together mayonnaise, buttermilk, green chili sauce, minced garlic, and lemon juice until smooth.

    Add salt to taste and mix well. Refrigerate until ready to use.

Cocktail Sauce

    Mix the Sauce

    In a bowl, combine ketchup, horseradish, lemon juice, Worcestershire sauce, and salt. Stir until well mixed.

    Taste and adjust seasoning if necessary. Refrigerate until ready to serve.
