    Prepare the Eggs

    Place the large eggs in a pot and cover them with water. Bring to a boil over medium-high heat.

    Boil the Eggs

    Once the water is boiling, cover the pot with a lid and remove it from the heat. Let the eggs sit for 12 minutes.

    Cool the Eggs

    After 12 minutes, transfer the eggs to an ice bath (a bowl of ice and water) to cool for at least 5 minutes.

    Peel the Eggs

    Once cooled, gently crack and peel the eggs under running water to help remove the shells easily.

    Prepare the Filling

    Slice each egg in half lengthwise and scoop the yolks into a mixing bowl. Add mayonnaise, Dijon mustard, salt, black pepper, and paprika to the yolks, and mix until smooth.

    Fill the Eggs

    Spoon or pipe the yolk mixture back into the egg whites.

    Set Up Breading Station

    Prepare three bowls: one with all-purpose flour, one with beaten eggs, and one with breadcrumbs.

    Bread the Eggs

    Carefully dip each filled egg half first in the flour, then in the beaten eggs, and finally coat with breadcrumbs.

    Heat the Oil

    In a deep skillet, heat vegetable oil over medium-high heat until shimmering.

    Fry the Eggs

    Fry the breaded egg halves in the hot oil for about 2-3 minutes on each side, until golden brown and crispy.

    Drain and Serve

    Remove the fried eggs from the oil and place them on a paper towel-lined plate to drain excess oil. Serve warm with green chili aioli on the side.
