Preparing the Oysters
Shucking the Oysters
Carefully shuck each oyster using an oyster knife. Hold the oyster in a towel with the hinge facing you. Insert the knife into the hinge and twist until it pops open. Slide the knife under the top shell to detach it and remove any fragments.
Placing on Ice
Once shucked, place the oysters on a bed of crushed ice on a serving platter to keep them chilled.
Making the Champagne Mignonette
Mixing Ingredients
In a small bowl, combine the champagne vinegar, finely minced shallot, and freshly cracked black pepper. Mix well.
Adding Champagne
Add the champagne to the mixture and stir gently to combine.
Letting it Sit
Allow the mignonette to sit for about 10 minutes to let the flavors meld.
