    Prepare the Potatoes

    Start by bringing a large pot of salted water to a boil. Add the cubed potatoes and cook until fork-tender, about 15-20 minutes.

    Drain the potatoes and return them to the pot. Add heavy cream, salt, and pepper to taste. Mash until creamy and smooth, then set aside.

    While the potatoes are cooking, heat a tablespoon of olive oil in a skillet over medium heat. Add the trimmed asparagus and sauté for about 5-7 minutes until tender, seasoning with salt and pepper. Set aside.
