Cooking Instructions

  1. 1

    Prepare the Steak

Remove the ribeye steaks from the refrigerator and let them sit at room temperature for about 30 minutes. This helps in even cooking.

  2. 2

    Season the Steak

Generously season both sides of each ribeye steak with kosher salt and black pepper. Make sure to press the seasoning into the meat for better flavor.

  3. 3

    Preheat the Pan

In a large cast-iron skillet or heavy pan, heat the olive oil over medium-high heat until it starts to shimmer, about 2-3 minutes.

  4. 4

    Sear the Steak

Add the seasoned ribeye steaks to the hot skillet. Sear each side for about 4-5 minutes, or until a nice brown crust forms. Do not move the steaks too much to allow a good sear.

  5. 5

    Add Aromatics

During the last minute of cooking each side, add the crushed garlic cloves and fresh rosemary sprigs to the pan.

  6. 6

    Baste with Butter

Add the butter to the pan and, using a spoon, baste the steaks with the melted butter and aromatics for about 1-2 minutes.

  7. 7

    Check Doneness

Use a meat thermometer to check the internal temperature. For medium-rare, it should read 130°F (54°C). Adjust cooking time based on your desired doneness.

  8. 8

    Rest the Steak

Once done, remove the steaks from the skillet and let them rest on a cutting board for about 10 minutes. This allows the juices to redistribute.

  9. 9

    Serve

Slice the ribeye against the grain and serve with your favorite sides. Enjoy your perfectly cooked bone-in ribeye!
