Amaro Nonino Ingredients

Method

Amaro Nonino Directions

  1. 1

    Infuse the Alcohol

In a large glass jar, combine the grain alcohol or neutral spirit with the dried herbs. Seal the jar tightly and shake gently to mix. Allow the mixture to infuse in a cool, dark place for at least 2 weeks, shaking it every few days.

  2. 2

    Prepare the Syrup

In a saucepan, combine the sugar and water over medium heat. Stir until the sugar is completely dissolved. Once dissolved, remove from heat and let cool. Add the split vanilla bean, cloves, and cinnamon stick to the syrup and let it steep for about 30 minutes.

  3. 3

    Strain the Infusion

After 2 weeks, strain the infused alcohol through a fine mesh sieve or cheesecloth into a clean jar or bottle, discarding the solid herbs.

  4. 4

    Combine the Infusion and Syrup

Once the syrup has cooled, strain out the spices and combine the infused alcohol with the syrup in a large mixing bowl or jar. Stir well to combine.

  5. 5

    Bottle Your Amaro

Using a funnel, pour the mixed amaro into clean bottles. Seal tightly and label the bottles.

  6. 6

    Age the Amaro

Let the bottled amaro sit for at least 1 month to allow the flavors to meld. Serve chilled or use in cocktails.
