Combine coffee and water

In a large jar or container, add 1 cup coarsely ground coffee. Pour 4 cups cold filtered water over the grounds, stirring gently to ensure all grounds are saturated.

Steep

Cover the container and steep at room temperature or in the refrigerator for 12 to 18 hours (12 for a milder brew, up to 18 for stronger).

Filter

After steeping, strain the coffee through a fine mesh sieve lined with cheesecloth or a coffee filter into another container. If needed, strain a second time to remove fines. This yields about 3 to 3.5 cups of cold brew concentrate.

Chill

Refrigerate the filtered cold brew concentrate until ready to use. Keep covered for up to 7 days.

Vanilla Creme

Warm (optional) and dissolve sugar

In a small saucepan over low heat (or using a microwave-safe bowl), combine 1 cup whole milk and 2 tablespoons granulated sugar. Warm gently just until sugar dissolves and the mixture is warm but not hot (about 1 to 2 minutes). Warming helps dissolve sugar evenly; you may skip warming if using simple syrup.

Combine cream and vanilla

Remove from heat. Stir in 1/2 cup heavy cream, 1 teaspoon vanilla extract, and a pinch of fine sea salt. Mix thoroughly until uniform.

Emulsify (optional)

For a richer, frothier creme, transfer the mixture to a jar with a tight lid and shake vigorously for 30–45 seconds, or use an immersion blender for 10–15 seconds until slightly thickened and frothy. Refrigerate the vanilla creme until cold (at least 15 minutes).

Assemble the drink

Fill a tall glass with 1 cup ice cubes. Pour 1 cup cold brew concentrate over the ice. If you prefer a slightly sweeter coffee, add up to 1 teaspoon simple syrup or additional sugar and stir to combine.

Top with vanilla creme

Gently pour 1/4 to 1/3 cup (or to taste) of the chilled vanilla creme over the cold brew. The creme will float and slowly mix in for a marbled effect. Stir before drinking if you want an even mix.

Serve immediately. Store any leftover vanilla creme in the refrigerator for up to 3 days and cold brew concentrate for up to 7 days.
