Toast and prepare sandwich base
Split the English muffin and butter each cut surface lightly with half of the butter. Preheat a skillet or griddle over medium heat. Place the muffin halves cut-side down on the dry skillet and toast until golden and slightly crisp, about 2–3 minutes. Remove and keep warm.
Cook the turkey sausage
Heat the neutral oil in the same skillet over medium. Add the two turkey patties, pressing gently to ensure contact with the skillet. Cook for 3–4 minutes per side, or until internal temperature reaches 165°F (74°C) and exterior is browned. If patties are thick, reduce heat to medium-low after flipping and cover for 1–2 minutes to finish cooking. Transfer patties to a plate and keep warm.
Make the eggs (fried/scrambled steaming method)
Wipe the skillet if needed and reduce heat to low–medium. Add remaining butter and let it melt. For folded fried eggs: crack one egg into a small bowl, season lightly with 1/2 tsp salt and 1/8 tsp pepper. Pour 1/2 tablespoon water into the skillet and immediately add the egg; cover with a lid to steam-cook until whites are set but yolks still slightly runny, about 1–2 minutes. Repeat for the second egg. For a quicker combined-cooked sandwich egg (folded/round): beat both eggs with remaining salt and pepper, pour into a small nonstick ring or pour into skillet, cook gently, folding to make a single folded portion about the size of the muffin, 1–2 minutes. Adjust cooking time to your desired yolk doneness.
Assemble with cheese and melt
Place one sausage patty on the bottom toasted muffin half. Top with one cooked egg. Place a slice of cheddar on the egg, then the second sausage patty, second egg, and the remaining cheddar slice if desired (or stack egg then cheese then top muffin). Return the assembled open sandwich to the warm skillet, cover for 30–60 seconds to gently melt the cheese and warm the sandwich through.
