Form patties

Divide the ground breakfast sausage into 4 equal portions (about 1/4 cup each). Shape each portion into a round patty roughly the diameter of your English muffin, pressing slightly to flatten to about 1/2-inch thickness.

Heat a large skillet over medium heat and add 1 teaspoon olive oil. When the oil shimmers, add the sausage patties, leaving a little space between them. Cook undisturbed for 3–4 minutes until the underside is browned.

Flip the patties and continue to cook for another 3–4 minutes, or until the internal temperature reaches 160°F (71°C) and patties are cooked through. Transfer patties to a plate and keep warm. Spoon off excess fat from the skillet if desired.

Eggs

In a medium bowl, crack the 4 eggs and add 2 tablespoons whole milk, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Whisk until blended and slightly frothy.

Wipe the same skillet used for the sausage clean with a paper towel and return to medium-low heat. Add 1 teaspoon butter and let it melt, coating the pan.

Cook folded eggs (sandwich style)

Pour the whisked eggs into the skillet. Let the eggs set at the edges for 20–30 seconds, then gently push the cooked edges toward the center with a spatula, tilting the pan so uncooked egg flows to the edges. Continue until eggs are mostly set but still slightly moist, about 1–2 minutes. Fold the eggs into a compact rectangle roughly the size of an English muffin using the spatula (or use an egg ring while cooking to make neat rounds). Remove from heat.

Alternative: Fried or Scrambled Eggs

If you prefer a fried egg, heat the pan to medium, add 1/2 tsp butter and crack 1 egg per sandwich, cooking to desired doneness. For fully scrambled, cook longer until firm. Adjust timing accordingly.

Assembly & Toasting

Split the 4 English muffins and spread the 1 tablespoon room-temperature butter across the cut faces.

Place the muffins cut-side down on a clean skillet or griddle over medium heat. Toast until golden brown, about 2–3 minutes. Remove from heat.

Top the bottom half of each toasted muffin with one cooked sausage patty, then place a folded egg portion (or fried/scrambled egg) on top. Add one slice of cheddar cheese over the hot egg so it softens. Cap with the muffin top.

If you want the cheese fully melted, return assembled sandwiches to the skillet, cover with a lid, and warm over low heat for 1–2 minutes until cheese is melted and sandwich is heated through.

Serve immediately while hot. Optionally serve with ketchup, hot sauce, or a side of fruit.
