Prepare Sugared Donut Holes
Place powdered sugar in one shallow bowl and granulated sugar mixed with cinnamon in a second shallow bowl. Melt the unsalted butter in a small microwave-safe bowl or on the stovetop until liquid but not hot (about 20–30 seconds in the microwave). Using two forks or tongs, gently toss each donut hole in the melted butter to coat evenly, then roll half of the donut holes in the powdered sugar (shake off excess) and the other half in the cinnamon-sugar mixture until evenly coated. Arrange coated donut holes on a sheet of wax or parchment paper in a single layer. Set aside while you make the glaze.

Make a Smooth Glaze
Place the semisweet chocolate chips in a heatproof bowl. Warm the heavy cream in a small saucepan over medium heat until it just begins to simmer (do not boil), or heat in the microwave until steaming. Pour hot cream over the chocolate chips and let sit 1 minute to soften. Add the corn syrup (or honey) and vanilla extract, then whisk slowly until the mixture becomes glossy and smooth. If the glaze is too thick, whisk in 1 tsp warm water or another teaspoon of cream at a time until it reaches a dipping consistency (thick but pourable). Keep the glaze warm by placing the bowl over a pan of barely simmering water (double-boiler) or reheat briefly in the microwave for 5–10 seconds as needed.

Holding each coated donut hole with a fork or dipping skewer, dip the top half into the warm chocolate glaze, letting excess drip back into the bowl. Return the dipped donut hole to the parchment-lined sheet and immediately sprinkle with rainbow sprinkles or chopped nuts while glaze is still wet. For variety, alternate between powdered-sugar-coated, cinnamon-sugar-coated, and glazed donut holes so you have a mix of finishes. Allow the glaze to set at room temperature for 20–30 minutes, or chill briefly (5–10 minutes) in the refrigerator to accelerate setting.
Serve or Store
