Sift and dissolve

Sift 2 tsp matcha powder into a small bowl or matcha bowl to remove clumps. Add 60 ml (about 2 fl oz) hot water at 80°C (175°F).

Whisk to a smooth concentrate

Using a bamboo whisk (chasen) or small whisk/frother, briskly whisk in a zigzag motion until the matcha is fully dissolved and a thin frothy layer forms on top (about 20–30 seconds).

Sweeten

Stir in 1 tbsp simple syrup or honey while the matcha is warm so it dissolves completely. Taste and adjust sweetness, adding up to another 1/2 tbsp if desired.

Milk & Ice

Prepare glass and ice

Fill a 12 oz (about 350 ml) glass with 1 cup of ice cubes.

Combine milk

Pour 1 cup cold milk over the ice. If you prefer a creamier latte, use whole milk or add an extra 2 tbsp milk or milk foam on top.

Assemble the latte

Slowly pour the sweetened matcha concentrate over the milk and ice. Pouring slowly helps create a layered look with green matcha floating atop the milk.

Mix and adjust

Stir gently with a long spoon to combine, or leave layered for visual effect and stir before drinking. Taste and add more sweetener if needed.

Garnish (optional)

Dust a light pinch of matcha powder over the top using a fine sieve, and add a mint sprig for aroma. Serve immediately with a straw.
