Combine dry ingredients

In a medium saucepan, whisk together the cocoa powder, granulated sugar, and salt until evenly combined and free of lumps.

Add milk and cream

Gradually whisk in the whole milk and heavy cream to the cocoa-sugar mixture, stirring until smooth and no dry streaks remain.

Heat and melt chocolate

Place the saucepan over medium heat and warm, stirring frequently, until steam rises and the mixture is hot but not boiling (about 5–7 minutes). Add the chopped semisweet chocolate and continue stirring until the chocolate is fully melted and the mixture is glossy and homogeneous.

Incorporate flavor

Remove the pan from heat. Stir in the vanilla extract and, if using, the warm espresso or coffee. Taste and adjust sweetness or salt if needed. Let the mixture cool for 10–15 minutes at room temperature.

Chill thoroughly

Transfer the chocolate custard base to a bowl, cover with plastic wrap pressed onto the surface to prevent a skin, and refrigerate until well chilled, at least 2 hours (or overnight for best texture).

Churn (ice-cream maker method)

Pour the chilled base into an ice-cream maker and churn according to the manufacturer's directions until it reaches a soft-serve consistency (usually 20–30 minutes). During the last minute of churning, add the chopped toasted nuts and/or mini chocolate chips if using.

Freeze to firm

Transfer the churned chocolate ice to a freezer-safe container, smoothing the top. Press a piece of parchment directly onto the surface, seal with a lid, and freeze until firm, at least 4 hours.

No-Churn Frozen Chocolate (alternative method)

If you don’t have an ice-cream maker: once the base is thoroughly chilled, whisk it vigorously for 1–2 minutes to incorporate some air, then pour into a shallow metal or glass pan (9 x 5 in or similar). Freeze for 45 minutes, then remove and vigorously beat with a fork or whisk to break up ice crystals. Return to freezer and repeat beating every 30–45 minutes for 3–4 cycles until smooth and scoopable. Fold in optional mix-ins in the final stir before the last freeze.

When ready to serve, let the frozen chocolate sit at room temperature for 5–10 minutes to soften slightly for easy scooping. Scoop into bowls or cones and sprinkle with cocoa nibs, shaved chocolate, or additional chopped nuts as desired.
