Cold-brew green tea
If you don't have cold-brewed green tea ready: steep 2 green tea bags in 3 cups cold filtered water in the refrigerator for 4–6 hours, then strain. Use 2 cups of the finished cold-brewed tea for this recipe and reserve the extra 1 cup for dilution or tasting adjustments.
Fruit & Flavor Concentrate
Prepare fruit base: In a small bowl or measuring cup, combine the freeze-dried strawberry powder (or 1/4 cup fresh strawberry puree), 2 tablespoons berry concentrate, and 1 tablespoon fresh lemon juice. Stir vigorously until evenly combined. If using freeze-dried powder, add 1 tablespoon of the reserved filtered water to help hydrate and dissolve the powder into a smooth slurry.
Sweetener
Add 2 tablespoons of simple syrup to the fruit slurry and taste. If you prefer a sweeter refresher, add the optional additional 1 tablespoon simple syrup. Stir until fully incorporated.
Add-ins
Muddle the fresh strawberry slices in the bottom of a tall glass or cocktail shaker to release juices and some texture. Add the hydrated fruit-syrup mixture to the muddled strawberries.
Fill the glass or shaker with 2 cups of ice. Pour in the 2 cups cold-brewed green tea and the remaining 1 cup filtered water (or use the leftover cold brew to reach desired strength). Gently shake (if using a shaker) or stir for 10–15 seconds to fully chill and blend the drink.
If you want small fruit pieces throughout (Dunkin-style bits), stir in the 1 teaspoon freeze-dried strawberry pieces now.
Assemble & Serve
Taste and adjust: sample the refresher and adjust sweetness, lemon, or fruit concentrate to your preference. For a brighter flavor, add another 1/2 teaspoon lemon juice; for more sweetness, add additional simple syrup by 1/2 tablespoon increments.
Serve: Pour the beverage into a tall serving glass over fresh ice if you used a shaker. Garnish with a mint sprig and lemon slice. Optionally, top with a few extra sliced strawberries or a sprinkle of freeze-dried strawberry pieces for visual appeal and texture.
Notes
Make-ahead: The fruit concentrate mixture and cold-brew tea can be prepared ahead and refrigerated for up to 48 hours. Assemble with ice and fresh fruit at service time for best texture. Scaling: This recipe yields roughly 1 large serving (about 16–18 fl oz); multiply ingredients proportionally for more servings.
