Method
Prepare Base Creamer
Combine dairy
In a medium saucepan or a heatproof mixing bowl, combine 1 cup whole milk, 1 cup heavy cream, and 1/4 cup sweetened condensed milk. Whisk briefly to blend the condensed milk evenly into the dairy.
Warm (optional)
If using cocoa powder or instant espresso, gently warm the mixture over low heat while stirring to help dissolve those powders. Heat only until steam appears and the mixture is warm to the touch (do not boil). Remove from heat.
Add salt and oil
Whisk in 1/8 teaspoon salt and 1 teaspoon neutral oil. The salt brightens flavor; the small amount of oil improves mouthfeel and helps the creamer remain smooth when added to hot coffee.
Add Flavoring
Vanilla or liquid flavors
For vanilla-flavored creamer: stir in 1 teaspoon vanilla extract until fully incorporated. For hazelnut or other liquid syrups: substitute the vanilla with 1 tablespoon hazelnut syrup or 2 tablespoons maple syrup for maple creamer.
Chocolate or coffee
For mocha creamer: whisk 1 tablespoon unsweetened cocoa powder and 1/2 teaspoon instant espresso powder into the warm base until fully dissolved. If needed, press the mixture through a fine-mesh sieve to remove any lumps.
Spiced or caramel
For pumpkin spice creamer: whisk 1/2 teaspoon pumpkin pie spice into the base. For caramel creamer: stir in 2 tablespoons caramel sauce while the base is warm so it disperses evenly.
Finishing & Storage
Emulsify (optional)
If using liquid lecithin, add 1/2 teaspoon now and whisk vigorously for 30 seconds or pulse 3–4 times in an immersion blender to create a homogenous emulsion that reduces separation.
Cool and chill
Allow the creamer to cool to room temperature. Transfer to a clean airtight bottle or jar. Refrigerate for at least 2 hours before using; flavors will meld and the creamer will thicken slightly.
Use and shelf life
Shake well before each use. Stored in the refrigerator in a sealed container, this homemade creamer will keep 7–10 days. Discard if it develops off odors, curdling, or mold.
Serving suggestion
Add 1–2 tablespoons of creamer to an 8-ounce cup of coffee, or adjust to taste. Stir into hot or iced coffee; if using in iced coffee, shake the jar well to re-emulsify before pouring.
