Prep ice and coffee

Measure 4 cups of ice and place in a high-powered blender. Use cold brewed strong coffee or chilled espresso (about 1 cup). If using freshly brewed espresso, chill it quickly by pouring over ice and stirring, then drain most of the melted ice so coffee stays strong and cold.

Add dairy

Pour 1/2 cup whole milk or half-and-half into the blender. Milk adds creaminess and helps create a smooth, scoopable texture.

Combine and blend

Add the 1 cup cold coffee to the blender with ice and milk. Secure the lid and pulse briefly to break up large chunks, then blend on high for 20–40 seconds until the mixture is smooth and slushy but not too liquid. If the mixture is too thick to blend, add 1–2 tablespoons of cold coffee or milk; if too thin, add a handful more ice and pulse.

Syrup & Sweetener

Sweeten

Add 3 tablespoons simple syrup and 1 tablespoon vanilla syrup (and 1 tablespoon optional flavored syrup if using) to the blender. Blend on high for another 5–10 seconds to incorporate evenly. Taste and adjust sweetness: add up to 1 tablespoon more simple syrup if you prefer sweeter.

Balance flavors

If coffee flavor is too mild after adding milk and syrups, pour out 1/4 cup of the slush and replace with 1/4 cup more chilled strong coffee or espresso, then pulse to combine. This preserves texture while boosting coffee intensity.

Portion and top

Divide the Coolatta between two 12-oz (approximate) serving glasses or one large 24-oz cup. Top each serving with 1 tablespoon whipped cream and drizzle 1/2 teaspoon of chocolate or caramel syrup (or other flavored drizzle) over the top.

Serve

Insert a straw and serve immediately while icy and cold. If not serving right away, keep covered in the freezer for up to 30 minutes and re-blend briefly before serving to restore texture.
