Prepare spices
Lightly crush the cardamom pods with the flat side of a knife (remove outer husks if desired), and give the cinnamon stick a quick smash to expose more surface area. Keep cloves, peppercorns and star anise ready.
Reduce & steep
Once boiling, reduce heat to low and simmer gently, uncovered, for 10 minutes to extract spice flavor. Stir once or twice.
Strain & cool
Strain the mixture through a fine mesh sieve or cheesecloth into a heatproof container to remove solids. Press gently on solids to extract liquid but avoid over-pressing to keep sediment out. This yields about 3 cups of chai concentrate. Store in the refrigerator for up to 5 days.
Milk & Assembly (per serving)
Heat / Froth milk
Pour 1 cup milk into a small saucepan and heat over medium until steaming and small bubbles form at the edges (do not boil). Alternatively, use a milk steamer. If you want foam, froth or vigorously whisk to create 2 tablespoons of foam.
Combine concentrate and milk
For a classic chai latte ratio use 1 part chai concentrate to 1 part milk. Add 1/2 cup (or '1 part') warmed concentrate to the heated milk (if concentrate is chilled, warm 30–60 seconds in microwave). Stir gently to combine. Taste and adjust: use more concentrate for stronger chai.
Serve & garnish
Pour the chai latte into a mug, spoon the milk foam on top if you made it, and dust with a pinch (about 1/4 tsp) of ground cinnamon or nutmeg. Serve immediately.
Scaling & storage note
Mix concentrate and milk in larger batches using the same 1:1 ratio and reheat gently. Leftover concentrate keeps refrigerated up to 5 days; freeze in ice cube tray for longer storage.
