Prepare glass and ice

Select a chilled rocks glass. Place one large clear ice cube or an oversized sphere into the glass and set aside.

Combine ingredients

In a mixing glass, add 2 oz Hudson NY Bourbon, 0.25 oz simple or Demerara syrup, and 3 dashes Regan's orange bitters. If using Angostura for extra depth, add 1 dash now.

Stir

Add plenty of ice to the mixing glass and stir gently for 20–30 seconds (about 15–20 turns) until the mixture is well chilled and slightly diluted (~20-30°F drop). The outside of the mixing glass should feel cold and slightly frosted.

Strain

Double-strain or pour the stirred cocktail over the large ice cube in the prepared rocks glass using a julep or Hawthorne strainer to keep small chips of ice out.

Express orange oils

Take the orange peel and hold it over the drink, skin-side down. Give it a firm twist to express the oils over the surface of the cocktail, then rub the peel around the rim of the glass to deposit oils and drop the peel into the drink as garnish.

Optional finish

If using a Luxardo or brandied cherry, skewer and rest it on the rim or drop it into the glass. Serve immediately.
