Clean and check mussels
Rinse the mussels thoroughly under cold running water. Scrub shells to remove debris and remove any beards by pulling toward the hinge. Discard any mussels that are cracked, open and do not close when tapped, or have an off smell. Place cleaned mussels in a bowl and sprinkle with 1 tsp sea salt; set aside in the refrigerator while you prepare the broth (this helps purge some sand).

Cook aromatics and chorizo
Heat a large, heavy-bottomed skillet or wide pot over medium heat. Add 1 tbsp olive oil and 2 tbsp butter. When butter foams, add diced chorizo and sauté 3–4 minutes until it renders fat and begins to brown. Push chorizo to the side, add minced shallots and sauté 2–3 minutes until translucent. Add garlic and cook 30–45 seconds until fragrant, taking care not to burn.
Build the sauce
Stir in 1 tbsp tomato paste, 1 tsp smoked paprika and 1 tsp dried oregano; cook 30 seconds to bloom the spices. Pour in 3 cups dry white wine and 1 cup clam juice (or stock), scraping the bottom of the pan to deglaze and lift browned bits. Bring to a simmer and reduce the liquid by about a third (4–6 minutes) to concentrate flavor.
Finish sauce
Lower heat to medium-low and stir in 1 cup heavy cream and 2 tbsp fresh lemon juice. Add remaining 2 tbsp butter in small pieces, stirring to emulsify and create a glossy sauce. Taste and season with freshly ground black pepper (about 1 tsp) and adjust salt if necessary (note: clam juice and chorizo add salt). Stir in 2 tbsp finely chopped fresh parsley.
Cook Mussels
Increase heat to medium-high so the sauce is at a lively simmer. Add the cleaned mussels to the pot in a single layer as much as possible, then cover with a tight-fitting lid. Cook for 4–6 minutes, shaking the pot once or twice, until most mussels have opened. Use tongs to transfer opened mussels to a serving bowl as they open. Discard any mussels that remain tightly closed after 7 minutes.
Once mussels are removed, return pot to medium heat and simmer the sauce 1–2 minutes to adjust consistency if needed (if too thin, reduce briefly; if too thick, add 2–4 tbsp water or wine). Pour sauce over the mussels in the serving bowl and give a gentle toss to coat. Sprinkle extra parsley and garnish with lemon wedges.
