Make simple syrup

Combine the water (2 cups) and granulated sugar (1 cup) in a small saucepan over medium heat. Stir until sugar fully dissolves and the mixture comes to a gentle simmer. Continue to simmer for 2 minutes, then remove from heat.

Stir in the light corn syrup (2 tbs), freshly squeezed lemon juice (2 tbs), and a pinch of fine sea salt into the hot syrup. Allow the syrup to cool to room temperature (about 20–30 minutes). Chilling in the refrigerator for 30 minutes will speed the process and produce a colder base for churning.

Prepare fruit purée

Place the hulled and quartered strawberries (12 oz) and fresh mint leaves (10 leaves) in a blender or food processor. Add 1/4 cup of the cooled simple syrup to help purée. Blend until completely smooth, about 30–45 seconds. Taste and add up to 1–2 tbs more syrup if the purée is too tart.

Pass the purée through a fine-mesh sieve into a bowl, pressing with the back of a spoon to remove seeds and fibrous bits. Discard seeds and solids. Stir the sieved purée into the remaining cooled simple syrup until fully combined. Chill the combined mixture thoroughly in the refrigerator until it is very cold, at least 1 hour (or up to overnight).

Churn the sorbet

Pour the chilled sorbet base (fruit + syrup) into an ice cream maker and churn according to the manufacturer's instructions, usually 20–30 minutes, until it reaches a soft-serve consistency.

For firmer texture, transfer the churned sorbet into an airtight container, press a piece of plastic wrap directly onto the surface to prevent ice crystals, and freeze for 2–4 hours until scoopable.

Scoop into chilled bowls or cones. Garnish with fresh mint sprigs or sliced berries as desired and serve immediately.
