Sanitize all equipment. Combine 6 liters of Arinto must, 2 liters of Loureiro must, and 1 liter of Trajadura must in a sanitized fermentation vessel to achieve a balanced Vinho Verde-style base. Stir gently to homogeneously blend grape juices.

Prepare and blend musts

Measure starting specific gravity and total acidity. Target a starting specific gravity around 1.066–1.074 (13–14 Brix) and total acidity around 6–7 g/L (adjust with tartaric acid if needed).

Add pectic enzyme (1 tsp) to the blended must and mix gently. Add yeast nutrient (2 tsp) to ensure a healthy fermentation.

Add enzymes and nutrients

If using fresh must and you want to control wild microbes, crush and dissolve the Campden (approx. 1 tsp) into the must and wait 24 hours before pitching yeast.

Sanitize with Campden (optional)

Rehydrate 5 g of EC-1118 (or chosen neutral white wine yeast) according to manufacturer instructions. Pitch into the must and seal the fermentation vessel with an airlock. Ferment at a controlled temperature of 14–18°C (57–64°F) to preserve aromatic freshness. Expect active fermentation to last 7–14 days.

Pitch yeast and ferment

Monitor specific gravity daily. When gravity approaches 0.994–1.000 (dry) or desired residual sugar level, proceed to settling.

After primary fermentation slows, measure titratable acidity and pH. Add tartaric acid in small increments (start with 1 tsp) to reach a bright, balanced acidity typical of Vinho Verde. Stir and allow 24 hours, then retest.

Adjust acidity

If a slight juicy finish is desired, stabilize the wine (potassium sorbate + Campden) and back-sweeten with up to 50 g sugar dissolved in a small amount of wine. Add gradually to taste, mixing thoroughly and testing after 24–48 hours.

Sweetness balancing (optional)

Rack the wine off gross lees into a clean carboy. Add bentonite (10 g) for protein stability and allow to settle. Optionally use egg white or isinglass to fine and clarify—add per standard fining protocols and let sit until clear.

Cold stabilization and fining

If back-sweetened, add potassium sorbate (approx. 1 tsp) and a small Campden addition to prevent refermentation. Filter if desired for clarity and microbial stability.

Stabilize and prepare for bottling

Sanitize bottles and closures. Rack the clear wine into 12 bottles (750 ml each). Seal with corks or screw caps. Label and rest bottles for at least 2–4 weeks before drinking; the wine will continue to develop for several months.
