Form Patties
Divide the 1 lb ground beef into two equal portions (approximately 8 oz each). Gently form each portion into a loose ball then press into a patty about 3/4" to 1" thick, slightly wider than the bun. Do not overwork the meat — keep the texture loose so the burger stays juicy.
Season & Indent
Make a shallow dimple in the center of each patty with your thumb to prevent doming. Lightly brush each side with Worcestershire sauce. Sprinkle both sides evenly with kosher salt and freshly ground black pepper. If using smoked paprika, lightly dust one side of each patty (optional).

Split the buns. Spread about 1 tablespoon of Duke's-style mayo on the bottom half of each bun and 1/2 tablespoon on the top half. Spread a thin line (about 1 teaspoon) of yellow mustard on the mayo of the bottom halves if you want the classic tang.

Thinly slice the red onion into rings, slice the tomato into 1/4" rounds, and wash and dry the lettuce leaves. Set aside two pickle chips per assembled burger.

Cook Patties
Increase heat under the skillet or griddle to medium-high. Add the patties to the hot surface and cook undisturbed for 3–4 minutes on the first side to develop a brown crust. Flip once and cook 3 minutes more for medium (adjust by 1 minute per side for rarer or more well-done). Add the cheddar and cover for about 30–45 seconds to melt.
