Garlic & Veggie Infused Vodka
Prepare infusion jar
Use a clean 8–12 oz jar. Add smashed garlic cloves, quartered onion, chopped green and red bell peppers, black peppercorns, lemon and lime peels, and Demitri's seasoning to the jar.
Pour 1 cup vodka over the aromatics so everything is submerged. Seal the jar tightly.
Infuse at room temperature for 4–6 hours for a pronounced fresh vegetal and garlic note; for a milder infusion refrigerate and steep 12–24 hours. Taste every few hours to reach desired intensity.
When desired flavor is reached, strain the vodka through a fine mesh strainer lined with cheesecloth into a clean container, pressing gently to extract liquid. Discard solids. The finished infused vodka can be used immediately and will keep refrigerated up to 2 weeks.
Bloody Mary Mix (per cocktail)
Fill a cocktail shaker or mixing glass with ice.
Add 2 oz of the garlic & veggie infused vodka to the shaker.
Pour in 6 oz tomato juice, 0.5 oz fresh lemon juice, 0.5 tsp Worcestershire sauce, 0.5 tsp Demitri's seasoning (or celery salt), 0.5 tsp prepared horseradish, 2 dashes hot sauce, and 0.25 oz pickle juice (if using).
Season with 6 grinds fresh black pepper.
Stir gently for 20–30 seconds to chill and integrate—Bloody Mary is traditionally stirred, not shaken, to avoid frothing.
Fill a highball or pint glass with fresh ice and strain the mixed Bloody Mary into the glass.
Garnish & Protein
Season the jumbo prawns with 1/4 tsp kosher salt and a few grinds of black pepper.
Garnish the Bloody Mary with the seared jumbo prawns (skewered or perched on the rim), the celery stalk, and the lemon wedge. Serve immediately.
