Form patties

Divide the ground chuck into four equal portions (about 4 oz each). Gently form each portion into a loose patty about 3.5–4 inches in diameter and roughly 3/4-inch thick. Do not overwork the meat. Press a shallow dimple in the center of each patty to help prevent swelling while cooking.

Season patties

Lightly brush or spritz both sides of each patty with Worcestershire sauce. Sprinkle kosher salt and freshly ground black pepper evenly on both sides just before cooking.

Cook patties

Heat a cast-iron skillet or griddle over medium-high heat until very hot. Add 1 tablespoon vegetable oil and spread to coat. Place patties on the hot surface (do not crowd; cook in batches if necessary). Cook for 3–4 minutes on the first side without moving to develop a good sear. Flip and cook 2–3 minutes on the second side for medium (adjust time for desired doneness). During the last 30–45 seconds of cooking, place one slice of American cheese on each patty and cover the skillet briefly (or tent with foil) to melt the cheese.

Buns & Assembly

Toast buns

While the patties cook, spread softened butter on the cut sides of the buns. Place buns buttered-side down on a separate skillet or on the griddle until golden and lightly crisp, about 1–2 minutes. Remove from heat and keep warm.

Prepare condiments

Stir the Duke's mayonnaise and yellow mustard together in a small bowl to make a tangy mayo-mustard spread. Set aside. Arrange pickles, sliced red onion, shredded lettuce, and tomato slices for assembly.

Assemble burgers

Spread about 1 tablespoon of the mayo-mustard mixture on the bottom half of each toasted bun. Place a lettuce layer on the bottom bun to help insulate from juices, then put the cheesy burger patty on top. Add 2–3 dill pickle slices and a couple of red onion slices, then a tomato slice. Finish with a light smear of Duke's mayonnaise on the top bun if desired, then close the burger.

Serve

Serve the burgers hot with your choice of sides. Provide extra pickle slices and condiments on the side. Enjoy immediately.
