Prep prawns

Rinse prawns under cold water and pat dry with paper towels. If not already done, peel and devein leaving tails intact for presentation. Place prawns in a bowl and season with 1 tsp salt, 1/2 tsp black pepper and the lime zest; toss to coat evenly. Let rest 5 minutes.

Prepare dredging stations

Set up three shallow bowls or trays: one with 1/2 cup all-purpose flour, one with the 2 beaten eggs, and one with the coconut-panko mixture (combine 1 cup sweetened desiccated coconut, 1/2 cup lightly toasted shredded unsweetened coconut and 1/2 cup panko breadcrumbs). Mix gently so mixture is even.

Coat prawns

Working in batches to avoid crowding, dredge each seasoned prawn first in flour, shaking off excess, then dip into beaten eggs, letting excess drip, then press into the coconut-panko mixture ensuring an even coconut crust all around. Place coated prawns on a wire rack and let sit 5–10 minutes to help crust adhere.

Pan-fry prawns

Pour about 1 cup neutral oil into a large heavy skillet to reach ~1/4 inch depth and heat over medium-high until shimmering (about 350°F/175°C if using a thermometer). Add prawns in a single layer in batches (do not overcrowd). Fry 1.5–2 minutes per side or until crust is golden brown and prawns are opaque and cooked through. Transfer cooked prawns to a paper-towel-lined plate or wire rack. If needed, keep finished prawns warm in a 200°F (95°C) oven while frying remaining batches.

Optional oven-finish for extra crisp

If crust seems oily or soft after frying, place fried prawns on a baking sheet and bake 3–4 minutes at 400°F (200°C) to firm the crust and drive off excess oil.

Sweet Chili Sauce

Blend chilies and garlic

In a small food processor or blender, combine 3 red Thai chilies (seeded if you prefer milder heat) and 2 peeled garlic cloves. Pulse to a coarse paste, adding a splash of the 1/4 cup water if necessary to help blend.

Cook sauce

In a small saucepan, combine the chili-garlic paste, 1/4 cup rice vinegar, 1/4 cup water, 1/2 cup granulated sugar and 1 tablespoon fish sauce. Stir and bring to a gentle simmer over medium heat, stirring so sugar dissolves.

Thicken and finish

Mix 1 teaspoon cornstarch with 1 tablespoon cold water to make a slurry. Gradually whisk the slurry into the simmering sauce; cook 1–2 minutes until sauce thickens to a glossy, pourable consistency. Remove from heat and stir in 1 tablespoon fresh lime juice. Taste and adjust: add more lime for brightness, more sugar for sweetness, or a pinch of salt if needed. Let cool slightly — sauce will thicken a bit more as it cools.

Garnish & Serve

Arrange coconut-crusted prawns on a platter. Spoon a generous amount of warm sweet chili sauce into a small serving bowl or lightly drizzle over prawns if preferred. Garnish with cilantro leaves, microgreens or sliced spring onion and lime wedges. Serve immediately while prawns are hot and crisp.
