Crack and whisk

Crack 4 large eggs into a medium mixing bowl. Add 2 tablespoons whole milk, 1 teaspoon salt, and 1 teaspoon black pepper. Using a whisk or fork, beat vigorously until yolks and whites are fully combined and the mixture is slightly frothy (about 20–30 seconds). This aerates the eggs for softer scrambled eggs.

Preheat pan

Place a nonstick or well-seasoned skillet over medium-low heat. Add 1 tablespoon unsalted butter and 1 teaspoon olive oil (optional). Allow the butter to melt gently — it should foam but not brown. Medium-low heat gives tender curds; higher heat will make them dry.

Add eggs

When the butter is melted and foamy, pour the beaten egg mixture into the pan. Let it sit undisturbed for about 10–15 seconds until edges just begin to set.

Gentle stirring

Using a silicone spatula, gently push the eggs from the edges toward the center, creating large, soft curds. Continue to move the eggs every 10–15 seconds. Keep the pan over medium-low heat so curds form slowly. Total cooking time should be about 2–4 minutes depending on your stove and pan.

Add cheese

When the eggs are about 70–80% cooked — still slightly runny but holding some shape — sprinkle 1 cup of freshly grated sharp cheddar evenly over the eggs. Fold the eggs once or twice to distribute the cheese and allow it to melt into the curds (30–45 seconds).

Finish off

Remove the pan from heat while the eggs are still slightly creamy; carryover heat will finish them. Taste and adjust seasoning if needed.

Garnish & serve

Transfer the scrambled eggs with cheddar to plates or a warmed serving dish. Sprinkle 1 tablespoon thinly sliced chives over the top, if using. Serve immediately with 2 slices of toast or warm tortillas and hot sauce to taste.
