Crack and whisk
Crack 4 large eggs into a medium mixing bowl. Add 2 tablespoons whole milk, 1 teaspoon salt, and 1 teaspoon black pepper. Using a whisk or fork, beat vigorously until yolks and whites are fully combined and the mixture is slightly frothy (about 20–30 seconds). This aerates the eggs for softer scrambled eggs.

Preheat pan
Place a nonstick or well-seasoned skillet over medium-low heat. Add 1 tablespoon unsalted butter and 1 teaspoon olive oil (optional). Allow the butter to melt gently — it should foam but not brown. Medium-low heat gives tender curds; higher heat will make them dry.
Gentle stirring
Using a silicone spatula, gently push the eggs from the edges toward the center, creating large, soft curds. Continue to move the eggs every 10–15 seconds. Keep the pan over medium-low heat so curds form slowly. Total cooking time should be about 2–4 minutes depending on your stove and pan.
Garnish & serve
Transfer the scrambled eggs with cheddar to plates or a warmed serving dish. Sprinkle 1 tablespoon thinly sliced chives over the top, if using. Serve immediately with 2 slices of toast or warm tortillas and hot sauce to taste.
